Butter "Nehrə"

"Nehrə yağı" is traditionally prepared in Azerbaijani households using two methods until the mid-20th century. For the method involving wood, a plank is cut from a poplar tree, typically 1.5 to 2 meters long, and the inside of the plank is smoothed with a tool called "nehrəgir." In other regions, especially in areas with sparse forests, it is prepared in a manner similar to filling a wooden vessel known as "gildən küpə."
Curd and a bit of warm water are poured into the "nehrə" and left to settle for a certain period, depending on the room temperature. During this time, the oil separates. Although the oil may solidify in cold weather, the quantity tends to be higher. After the oil has separated, it is poured into a container, and the collected oil is ready to be presented at the table.
