Şirin sucuk is one of the traditional sweets of Azerbaijan and the Caucasus region. Often referred to as "şirin çörçək" or "şirin sucuk," it is made by cooking nuts such as walnuts, almonds, or hazelnuts in grape or sometimes mulberry juice, creating a naturally sweet, energy-rich treat. This confection is especially prepared for winter and is both nutritious and satisfying.

Ingredients:

  • Water (milk can be used in some variations, but traditionally water is used)

Preparation Process:

1. Preparing the Nuts:
Nuts are threaded onto a string (walnuts, almonds, or hazelnuts). The choice of nuts can vary depending on preference. The threaded nuts are then ready to be dipped into the sweet syrup.

2. Making the Syrup:

  • The main base is grape juice; sometimes mulberry juice is used.
  • The juice is thickened with flour and sugar (optional) to create a dense, sticky syrup.
  • The mixture is cooked until it reaches a thick, dough-like consistency.

3. Dipping the Nuts:

  • Threaded nuts are immersed in the syrup and fully coated.
  • After coating, the nut strings are hung to dry for several days.

4. Drying:

  • Sweet soujook is typically dried for 1–2 weeks in a hanging position.
  • Once fully dried, it becomes a sweet, elastic, and ready-to-serve treat, ideal for winter consumption.
