Pip leaf
Pip leaf pickle is one of the traditional pickles loved in Azerbaijan and many regions of the Caucasus. Pip leaf (grape leaf) is most often used in the preparation of dolma, but it is also very popular in pickled form. Pip leaves, specially prepared for pickling, are preserved for use during the winter months and add a unique flavor to dishes.
Features of Pip Leaf Pickle:

Preparation of Pip Leaf Pickle:

- Fresh grape leaves
- Water
- Salt
- Lemon salt or vinegar (for pickling)
Preparation Process:
Preparing the Leaves: Fresh grape leaves are carefully washed. It is important that the leaves are tender and healthy so that they retain their quality during pickling.
Blanching the Leaves: The leaves are blanched by briefly immersing them in boiling water. This process keeps them flexible and helps them hold up better in the pickle.
Marinade Preparation: Boil water and salt to make a brine solution. This solution will be used to pickle the pip leaves. Optionally, lemon juice or vinegar can be added to enhance the flavor of the pickle.
Arrangement of Leaves: Pip leaves are stacked in layers in a jar or large container. A salt water solution is added between each layer. The jar is tightly closed and stored in a dark, cool place.
Fermentation: Pip leaves are fully fermented after about 2-3 weeks and are ready to use. For longer storage, the leaves should be stored in a cool place.
Uses of Pip Leaf Pickle:
- Dolma: Grape leaf pickle is an ideal tool for making dolma during the winter months. Used like fresh leaves, it provides the perfect elasticity and flavor for wrapping the filling of the dolma.
